Step-by-step directions
1 In a pan, sauté the onion in 4 tablespoons of oil, let it cook until it becomes transparent.
2 Add the zucchini stirring with a wooden spoon and let cook for 10 minutes.
3 Add the tomato and tomato paste diluted in 1/2 cup of water with 1 pinch of sugar (to remove acidity), salt, pepper and let cook then reduce heat and let simmer until fully cooked. (15min)
4 Add a hot pepper for those who like it.
5 Serve plain or add 2 eggs as an omelet and stir.
