  • 10 Marennes oysters size n°3
  • 2 shallots finely minced
  • 1.7 fl oz (5 cl) of muscadet
  • 1 small bunch of chives finely minced
  • 0.6 cup (15 cl) of liquid cream
  • 1 pinch of wasabi
  • 2 g of agar agar or Kappa carraghenane
  • 1 pink grapefruit slices removed (raw)
  • and the juice mixed with the cream
  • 2 gr of non-pareil capers
  • salt and ground pepper
