A beautiful recipe to make with very fresh salmon and avocado. The tartare is prepared at the last minute. Allow 10 minutes for preparation. The secret is salmon bought from the fishmonger on the same day, not frozen. The avocado must be just right, neither too hard nor too soft. Serve chilled but not iced, around 50°F (10°C).
