Pear Almond Tart (Amandine) soft and indulgent
Ingredients for 8 servings
- 7 oz (200g) flour
- 1.75 oz (50g) butter at room temperature
- 0.7 oz (20g) sugar
- 1 egg
- a pinch of salt
- a pinch of baking powder
- water
- the filling
- 5 peeled pears
- 3.9 oz (110g) almond powder
- 2 eggs
- 3.5 oz (100g) softened butter
- 3.5 oz (100g) caster sugar
- 1 tablespoon flour
- syrup
- 1 half liter water
- 2.1 oz (60g) sugar
Step-by-step recipe
1 the dough: In a bowl mix the flour and the butter cut into small dice, then the egg, sugar, salt and baking powder, add water until you obtain a dough.
Let rest.
2 the syrup: In a saucepan put the water + sugar bring to a boil, poach the peeled pear halves in it for 10 minutes then remove them and let cool.
3 the filling: In a bowl beat the sugar and eggs, add the butter at room temperature to the mixture, mix, add the almond powder and the tablespoon of flour. Mix everything well.
4 Spread the dough in the pan, prick the dough with a fork, pour the almond filling on the bottom of the tart, place the pears in flower shapes on top, sprinkle with sliced almonds
5 Bake at thermostat 7 (210°) for 30 minutes.
