1 Preheat the oven to 410°F (210 °C) (gas mark 7). In a bowl, whisk the mascarpone with the caster sugar. Add the eggs, then the vanilla.
2 Line a tart pan with puff pastry. Wash and peel the rhubarb, cut it into small cubes, and arrange them on the pastry base. Pour the mascarpone mixture over the top.
3 Bake for 40 to 45 minutes. Let cool before serving.
A simple and tasty recipe. You can also prepare it 15 minutes ahead by mixing the small rhubarb cubes with a little vanilla sugar.
