This version of apple tart is composed of shortbread dough, applesauce and excellent apples, a very good tart indeed it will be more fragile to cut but it will be as tasty as you could wish Crisp on the bottom, melt-in-the-mouth in the centre, with a light brown sugar caramel forming in the last 10 minutes: each bite balances the tartness of Pink Lady apples with the depth of the homemade compote.
