1 Make sure to chill the siphon canister in the fridge beforehand.
2 Whisk together the very cold heavy cream and goat cheese until the mixture is smooth and creamy, with no lumps that could clog the siphon. Season with salt and pepper.
3 Pour the mixture into the siphon, charge with a gas cartridge, shake 2 to 3 times upside down, and refrigerate for at least 1 hour.
4 Rinse the tomatoes and hollow them out gently. Lightly salt the inside of each tomato and pipe in the mousse from the siphon.
5 Top with a small amount of fresh chives.
Great recipe! Two small tips: make sure your goat cheese and cream are well mixed together so you don't have any issues when using the siphon, and give each tomato a small knife cut at the base so they stay upright (smiles).
