Ingredients for 6 servings

  • 500 g (17.75 oz) of puff pastry (organic pure butter).
  • 500 g (17.75 oz) of field potatoes samba style peeled washed and finely sliced.
  • 1 yellow onion sliced.
  • 2 grey shallots if possible chopped.
  • 1 garlic clove degerminated.
  • 60 g (2.1 oz) of cantal between 2 sliced
  • fresh herbs (chives, parsley etc all chopped together).
  • 1 egg yolk mixed with a spoon of cold water (egg wash)
  • 1 dl of thick artisanal cream
  • salt and ground pepper.
