Ingredients for 4 servings
- 1 beautiful skate wing about 1 kg cut into 4 pieces
- 200 g of small new potatoes from Noirmoutier or Ré cooked either in sea water or salted water then peeled.
- Sea water or salted water with sea salt, a little milk, a good splash of vinegar, thyme and bay leaf.
- Half-salted Charentes butter
- 50 g of pickled nasturtiums or fine capers
- lemon thyme
