Ingredients for 5 servings
- 150 g of flour
- 5 cl of grapeseed oil
- 10 cl of milk
- 5 egg whites
- 300 g of firm cherries
- 100 g of crystal sugar
- 1 pinch of cinnamon and salt
- frying oil (grapeseed oil for example)
1/ Pour your flour into a large bowl, add the oil, salt and milk, and mix until you obtain a smooth batter.
2/ Beat your egg whites until very stiff, you should be able to turn your dish upside down without them falling. Gently fold them into your batter and let rest for 40 minutes.
3/ Wash the cherries, without removing the stems, and dry them by gently wiping them with absorbent paper.
4/ In a small dish mix your cinnamon and your crystal sugar.
5/ Heat your frying oil.
6/ Hold your cherries by the stem and dip them in your batter, then gently place them in your frying oil until they turn golden.
7/ Drain the fritters on absorbent paper, and roll them in the sugar-cinnamon mixture.
