Ingredients for 4 servings
- 2 unpeeled garlic cloves
- a little thyme and 2 bay leaves
- 1 pot of fine sweet butter
- fleur de sel (Ré or Guérande)
- pepper mill
1- Clean your beets then place them in the center, fold up the 4 corners, before closing completely add the garlic clove, bay leaf and a little thyme flowers
2- For cooking you have 3 options:
a) My favorite: In the fireplace buried under embers for about 1 hour.
b) In the hearth of a large BBQ 1h15
c) In the oven at 185°(6+) 1h35
3- Remove your beets and quickly cut them in half lengthwise, place each half in a small bowl and the rest is.... indulgent, arm yourself with a spoon, add a little butter, a little fleur de sel and a turn of the pepper mill and eat, with each bite repeat until the deepest part of the beet you will have a slight taste of garlic at the back of your mouth, just delicious.
