Ingredients for 6 servings
- 500 grs of flour.
- 100 grs of vanilla sugar.
- 100 grs of softened butter.
- 200 mls of milk.
- 1 packet of dry yeast (11grs) or 20 grs of baker's yeast.
- 3 eggs + 1 yolk.
- 100 grs of chocolate chips.
1/ With baker's yeast, warm the milk and then dissolve the yeast.
for dry yeast put it directly on the flour but warm the milk as well.
2/ Put all the ingredients in the robot bowl, keep 1 egg for the end.
Mix everything for 10 minutes until the dough is well homogeneous.
3/ Flour a dish and put the dough in a ball in the dish, cover it with a cloth and let it rise for 1 hour.
4/ Then "degas the dough" work it again to remove the air.
take scalloped muffin molds.
make portions the size of a small mandarin, shape each one into a ball and place in the muffin molds.
Let rise for another hour. They will double in volume.
5/ Preheat the oven after 45 minutes of rising. After one hour of rising, take the remaining egg, beat it like an omelet and add 1 tbsp of milk and brush it on the brioches with a brush.
6/ Bake for 20 minutes at 180°c.
let cool and enjoy with hot chocolate or a good glass of milk
