  • 4 medium potatoes from the Île de Ré
  • 30 cl of liquid cream (30%)
  • 80 g of salted butter
  • 1 bunch of garden chervil (if possible) roughly chopped
  • salt and Timut pepper
  • (skate broth made with a little vinegar thyme lemon bay leaf a few coriander seeds sea salt)
