Ingredients for 4 servings
- Roasted Comté string and truffle pieces for 4 people:
- 1 string cut in half lengthwise then into 4 equal parts
- 200 g of Comté with rind removed (you can keep it, it's just for aesthetics)
- 40 g of Luberon truffle pieces*
- 2 endives wiped, opened in half lengthwise then cut into thick julienne (sticks)
- 1 tablespoon of English mustard
- 6 g of matcha green tea powder* just heated in 5 cl of vinegar and left to cool
- a pinch of salt and freshly ground pepper.
