Ingredients for 4 servings

Shredded endive, green tea mustard (Matcha)
  • Roasted Comté string and truffle pieces for 4 people:
  • 1 string cut in half lengthwise then into 4 equal parts
  • 200 g of Comté with rind removed (you can keep it, it's just for aesthetics)
  • 40 g of Luberon truffle pieces*
  • 2 endives wiped, opened in half lengthwise then cut into thick julienne (sticks)
  • 1 tablespoon of English mustard
  • 6 g of matcha green tea powder* just heated in 5 cl of vinegar and left to cool
  • a pinch of salt and freshly ground pepper.
