- 500 g of young spring leeks called "pencils"
- 6 beautiful fresh French scallops cut in half lengthwise
- 100 g of young farmhouse Maroilles, rind removed and cut into small cubes
- 1 beautiful Carmine from full ground (red endive)
- 1 round of puff pastry "pure butter" 25 to 30 cm.
- To make the "Migaine"
- 3 farmhouse eggs beaten with 25 cl of 30% liquid cream
- 80 g of half-salt butter
- salt, freshly ground pepper and a grating of nutmeg
