Ingredients for 6 servings
- 12 large turkey wings
- 1 onion
- 1 tomato
- 2 garlic cloves
- 1 apple
- 10 cl dry white wine
- salt and freshly ground pepper
- 8 gr madras curry
- thyme flowers and 1 bay leaf
preparation and transformation of wings into "drumsticks" the evening before:
-1- using a large knife, cut the wing under the top joint, then with your fingers peel back to the base to obtain small drumsticks.
-2- place them in a dish, salt, pepper, add a little thyme flowers, the bay leaf then drizzle with olive oil, cover with plastic wrap and refrigerate.
the next day:
-1- preheat your oven to 180°(th 6).
-2- cut the apple and tomato into mirepoix (small cubes).
-3- place a casserole over heat with 1 dl of olive oil then roast the drumsticks to give them a nice color.
-4- add the onions, tomato and apple. add the curry and let sweat covered over low heat for 5 minutes.
-5- incorporate the white wine and return to a boil. taste the seasoning then cover and cook in the oven for 1 hour.
serve on nice plates with a nice ratatouille molded in a ring mold. a true summer treat...
