1/ cut the rabbit into pieces.
2/ brown the onions in the oil in a casserole or pressure cooker (if in a hurry). remove them and put the rabbit pieces in.
3/ when they are well browned on each side sprinkle with flour or "cornstarch" moisten with hot water and white wine and saffron. salt, pepper. add a bouquet garni and the browned onions.
4/ close the casserole, let cook 12 minutes in pressure cooker or 55 minutes in regular casserole. check the seasoning.
5/ meanwhile clean the mussels, wash them (without letting them soak in water).
6/ put the rice to cook according to the time indicated on the package - 2 or 3 minutes.
7/ open the casserole add the mussels and rice and cook for another 5 minutes in casserole or 3 minutes in pressure cooker.
check the cooking then plate on a dish the rabbit surrounded by mussels and yellow rice.
eat the mussels with your fingers since they are incorporated in the recipe with their shells.
