I no longer remember where I found this recipe, but I make it for every full-scale event, medieval historical reenactment and other small parties....
put the flour in a mixing bowl, then make a well in which you will distribute the salt, with the almond powder and the zests of orange that you will have finely grated.
then place the butter cut into fine cubes and the powdered sugar in this same well. knead to work this dough to obtain a smooth cream.
bring the flour towards the center and rub the mixture obtained. then add the egg white with the orange blossom essence or the liqueur of your choice.
work the dough until it becomes smooth.
flour a work surface and between your hands roll the dough to form small packets in the shape of fingers (this is perhaps the most delicate part.... shaping which at first can turn out to be more troll fingers tinkering at midnight !!!)
place your little fingers on a baking sheet that you will have covered with parchment paper. bake for about fifteen minutes in an oven at 160° (fairy fingers should be golden)
sprinkle with powdered sugar or varnish to make pretty nails.
