Ingredients for 4 servings
- 24 beautiful shiny sardines from La Cotinière or Les Sables (d'Olonne)
- a few sprigs of lemon thyme
- good ripe olive oil
- Ré flower salt
- a few crushed Timut pepper berries
1- Heat the plancha at position 5 out of 6.
2- Pour a drizzle of olive oil then quickly arrange your sardines in a staggered pattern (head to tail) cook for 3 minutes.
3- Turn them over, then add another drizzle of olive oil, place your lemon thyme sprigs on top, scatter your crushed Timut pepper berries, cook for 3 minutes then season with a few grains of flower salt when serving.
*Between the grapefruit flavor given by Timut pepper and the lemony flavor of thyme, your sardines will be fragrant and you will find these same flavors when tasting.
