Ingredients for 8 servings
- Cod 1.5 kg
- potatoes 6 to 8
- Onions 6 to 8
- tomatoes 6 to 8
- bell peppers 6 to 8
Take cod and cut it into squares.
Soak these squares for 48 hours in water, making sure to place the skin side down. Change the water several times during this process.
Once the cod squares are desalted, remove the skin and bones.
Separately prepare 6 to 8 potatoes, peel them and cut into slices, 6 to 8 tomatoes, clean them and cut into slices, 6 to 8 beautiful onions, which will be cut into slices and finally 8 bell peppers which will be seeded and cut into small pieces.
In a large pot, arrange:
a layer of tomato slices
a layer of potato slices
a layer of cod squares
a layer of onion slices
a layer of bell pepper pieces
Repeat this operation until all ingredients are used up, pepper and add a little cayenne pepper (or tabasco)
Bring to a boil on low heat, then simmer gently for 1 hour and a half before serving, salt if needed
Very important: Never add water to this preparation, the cod must cook in the juice given off by the vegetables
