Ingredients for 4 servings
- 2 sweet potatoes
- 4 potatoes (charlotte)
- 10 cl of heavy cream
- 1 tablespoon of mustard
- chopped chives
- coarse salt
1/ Wash 2 sweet potatoes and 4 potatoes, place them on a bed of coarse salt and cook in the oven at 180° for approximately 45 minutes.
2/ Remove the flesh from the sweet potatoes and potatoes while keeping the skins, mix the flesh then add the heavy cream, mustard and chives.
Season, then fill the potato skins and simply reheat them in the oven before serving.
Originally these potatoes are served with a sweet and savory dish, but they can also be served with a barbecue, roasted meat.....To remove the potato flesh, you can either cut them in half, or remove a small lid and empty the skins with a small spoon. Fill the skins with a pastry bag with a fluted tip and replace the small lid.
