Ingredients
Tempura Batter:
- 15 cl cold mineral water
- 1 egg
- 110 g rice flour
Proportions according to elements to fry
1- Pour 15cl of cold mineral water into a bowl, then into the freezer for 2 minutes.
2- In a bowl, crack 1 egg then beat it slightly with a whisk, add your iced water and a little salt (optional).
3- Then pour 110g of rice flour, stir lightly* then add a large tablespoon of crushed ice.
There you go, you can use it right away to prepare your shrimp tails, fruits, vegetables, poultry etc.
The only small drawback of this batter is that it doesn't keep.
I advise you to make them with grapeseed oil.
* Do not smooth your preparation, leave small lumps in it
