Ingredients for 4 servings
- 4 large potatoes
- 50 gr of butter
- 25 gr of liquid cream
- Salt and pepper
- 1 egg separated
- nutmeg to taste
- cheese to taste
Bake the potatoes in the oven
when they are cooked
remove a slice (hat) then empty the potatoes leaving 4mm of potato (shell)
In a bowl put the potato flesh, butter, milk or cream, salt, pepper, a pinch of nutmeg to taste (optional) and the egg yolk as if to make a puree
Then beat the egg white until stiff peaks form and add it by lifting and cutting as for a soufflé
Place the puree in the shells then sprinkle with cheese and set your oven to grill position until golden to your liking you can add the small hat back and serve with a nice salad
