Ingredients for 4 servings
- Firm potatoes 1 kg
- Garlic, parsley
- Salt, pepper
1- Peel and slice the potatoes into rounds, dry them.
2- Put the duck fat (or goose fat) in the pan and let it heat well.
3- Throw in the potatoes and sear them over high heat while stirring. Salt and pepper.
4- As soon as they change color, lower the heat and let simmer over very low heat, slowly by covering your pan. Stir gently if necessary, approximately 15 to 20 minutes.
The potatoes will be even more tender if, at the end of cooking, you turn off the heat and still covered, you wait a good quarter hour before serving them.
5- Sprinkle with persillade (garlic-parsley hash).
