1- In a saucepan pour a splash of olive oil then "wilt" tomato, pepper, onion, garlic and lemon thyme, salt and add the curry then sweat covered gently for 10 minutes then pour the 5 cl of Noilly Prat turn off the heat and keep covered.
2- In a pan pour a good splash of olive oil then pan-fry your seasoned tails 5 minutes on each side, turn off the heat and keep covered.
3- When eating toss your pasta with butter then heat your little sauce and your skate wings then on very hot plates dress and coat them with the boiling sauce and plant your Pennes finishing them with a caper finish with a beautiful bouquet of basil.
