1- Bring 2 liters of salted water to a boil. Pour 200 g of gourmet quinoa and let cook on low heat for 12 minutes.
2- Drain the quinoa using a fine strainer.
3- In a salad bowl put: 2 tbsp of olive oil, 1 tbsp of balsamic vinegar, 2 tbsp of chopped parsley and garlic, a pinch of Cayenne pepper, salt and pepper. Mix this sauce vigorously.
4- Add the quinoa while still warm to this sauce. Mix carefully and refrigerate for three or four hours.
To consume: hot or as a salad in winter or summer, delicious with all meats and fish. Quinoa is a light dish that can be served on any occasion.
