Ingredients for 4 servings
- 6 slices of beef
- 300 g of fresh goat cheese
- 4 egg yolks
- 1 small bouquet of herbs: flat parsley, savory, sage
- A little oil for the meat and a pinch of ground ginger
- 2 lemons
- 4 egg yolks
- 1 small bouquet of flat parsley
The ravioli
1/ Finely chop the herbs. On low heat mix the cheese, herbs and egg yolks. Set aside.
2/ Cut the meat slices in half into triangles. Flatten them, oil them and sprinkle with ginger. Turn them over, put a spoonful of the filling on one side, fold and close with toothpicks. Steam for 10 minutes.
3/ Prepare the sauce; squeeze the lemons and mix them with the egg yolks and chopped parsley.
4/ When the ravioli are cooked remove the toothpicks. Plate with the sauce.
