Ingredients for 6 servings
- 130 g of Cantal cheese between two (rind removed)
- 250 g of fresh cheese
- 2 eggs
- salt (little) and ground pepper
- 1 bunch of chives chopped (finely minced)
1- in the mixer or blender put the slightly crushed Cantal, fresh cheese, eggs, salt, pepper and chives, process for 30 seconds and transfer to a salad bowl.
2- preheat the oven to 200°(th6-7)
3- fill the molds to the top then place in a baking dish in a water bath (half full) with very hot water.
4- bake in the oven for 20 minutes (as usual you check with the tip of a knife to verify the cooking)
wait 5 minutes after removing from the oven before unmolding.
serve unmolded hot, warm or cold with for example a good salad dressed with hazelnut oil and sherry vinegar.
you can also put the cooked cooled ones in the freezer you never know someone might show up unexpectedly !!!!
