1- Pound 5 cloves of garlic with the germ removed, with 1 small red chili pepper
2- Then when it is reduced to a puree add 2 egg yolks and mix well.
3- Prepare this sauce like mayonnaise by slowly incorporating 2 dl of olive oil.
4- At the end incorporate 2 tablespoons of boiling fish stock (for the color).
To make this rouille you may not have a mortar and pestle, so I will give you a trick to make it:
put your garlic cloves with the germ removed and your small red chili pepper in a clean cloth. close the edges of the cloth and crush its contents with a mallet or a rolling pin until you obtain a paste. then put it in a bowl and continue the recipe normally.
