Prepare the batter
In a bowl, pour your flour, make a small hole in the center (well)
place your whole egg beaten like an omelet, the salt, the sugar, then your 15cl of cold water stirring with a whisk so as not to have lumps
then cover and let rest in the fridge for 1h30.
1- Heat your grapeseed oil to a medium temperature.
2- Meanwhile peel the bananas and cut them into "whistles" (on the bias) 4 to 5cm in length.
3- Dip your whistles in the batter, plunge them 5 by 5 into the oil for 4 to 5 minutes until they are well golden then remove them onto absorbent paper.
4- For the preparation of your caramel:
In a heavy-bottomed saucepan pour your sugar cubes, your small spoon of vinegar and your 10cl of water then cook gently.
5- Meanwhile, prepare a large bowl filled with ice cubes and cold water.
6- When your caramel is nice and golden place your saucepan in a shallow dish in which you have put cold water to stop the cooking.
7- This is then the final part of the recipe:
Take one by one each fried banana "whistle" and dip it with a fork into your still warm caramel coat it quickly pull it out and plunge it immediately into your iced water so the caramel will harden trapping your banana whistles you will then only have to take them out prepare a plate with your toasted sesame seeds and roll your "whistles" in it.
And I would be willing to bet that your banana "whistles" will not be: whistled !!!
