Ingredients for 4 servings
- 1 Beautiful chicken
- 10 small potatoes
- 200 g of peas
- 1 chicken stock cube
- 1 tsp ginger
- 1 tsp cumin
- 1 tsp sweet paprika
- 1 packet of food coloring
- 1 onion
- Olive oil
- Coriander
- Salt, pepper
1- In a small ramekin, put 4 to 5 tablespoons of oil, all the spices as well as the onion in small pieces and coriander, mix everything together. Clean the chicken well and put it in a plastic bag (I use a freezer bag) and pour the spiced preparation into the bag, close the bag and knead well so that the chicken is covered with spices. Let your chicken marinate for at least 1 hour.
2- In a large pot of water cook the potatoes, in another pot cook your peas for 10 minutes in salted water.
3- In a tagine or earthenware dish, put your chicken and empty the bag well to recover the marinade, add plenty of water (approximately 1 liter) and add the chicken stock cube.
4- Cook your chicken for 1 hour 30 minutes over medium heat.
5- Peel your potatoes and cut them into 4 or 6 pieces, add them around the chicken, as well as the drained peas.
6- Let simmer over low heat for another 20 to 30 minutes.
Serve hot with crusty bread. Enjoy!!
