- 3 beautiful quinces of approximately 500 g
- 300 g caster sugar
- 1 liter mineral water
- 2 eggs, 80 g caster sugar, 80 g "organic" almond powder, 2 cl brown rum, 80 g melted butter cooled
- a little quince jelly for finishing.
