Ingredients for 6 servings

  • 400 g shortbread pastry (see recipe on the website)
  • 3 beautiful quinces of approximately 500 g
  • 300 g caster sugar
  • 1 liter mineral water
For the preparation of the almond cream:
  • 2 eggs, 80 g caster sugar, 80 g "organic" almond powder, 2 cl brown rum, 80 g melted butter cooled
  • a little quince jelly for finishing.
