Ingredients for 6 servings
- 70 g caster sugar 1 egg yolk
- 1 pinch of salt
- 120 g softened butter
- 200 g flour
- 5 beautiful bananas not too ripe
- 1 pot of liquid crème fraîche 25 cl
- 3 whole eggs
- 100 g caster sugar
- 50 g dried coconut pulp
preparation of the shortbread dough:
1- Make a well with the flour (small indent) in the center add all the ingredients and incorporate quickly then make a ball, wrap it and put it in the fridge.
2/ Roll out and place in a pre-buttered tart tin
preparation of the filling
1/ Preheat the oven to 200°(th 6-7)
2/ Cut 4 bananas into slices and arrange them at the bottom of the tin
3/ In a bowl mix the pot of crème fraîche, the whole eggs, the sugar and the coconut, pour into the tin over the bananas, decorate the top with more slices of the last banana.
4/ Bake 25 to 30 minutes watch the color of the dough, it should not be too cooked or burned
5/ Let cool and just before serving sprinkle with coconut for decoration.
