Ingredients for 4 servings
- 20 cl of very cold liquid fresh cream
- 8 medium-sized cocktail tomatoes
- 200 g of goat cheese
- Salt and pepper
1- Remember to put the siphon bowl in the fridge beforehand to chill it well.
2- Whisk the very cold liquid cream with the goat cheese. The mixture should be smooth and creamy (without lumps that could block the siphon). Salt and pepper.
3- Put the mixture in the siphon, insert a gas cartridge, shake 2 to 3 times upside down and refrigerate for at least 1 hour.
4- Wash the tomatoes and hollow them out gently. Lightly salt the bottom of the tomatoes and pour the siphon preparation, head down.
5- Add a little fresh chives on top.
