Anchoïade (Provençal Anchovy Dip) tasty and fragrant
Ingredients for 6 servings
- 21 oz (600 g) fillets of anchovy in olive oil
- 3 cloves of garlic, cored and finely chopped
- 0.6 cup (15cl) olive oil
- 0.3 fl oz (1cl) vinegar or lemon juice
Step-by-step recipe
Traditionally the anchoiade is made with a mortar, here I offer you a much simpler adaptation, for the one who wouldn't happen to have one.
Place the anchovies in a salad bowl, add the garlic then blitz for a minute or so. Now, using a wooden spoon or a small whisk, blend in the olive oil like you would do for a mayonnaise; at the end add in the vinegar or the lemon juice.
Spread some of it on a thick slice of French bread and grill it for 5 minutes. As a snack yummi!..
