Recipe: Vegetable and Goat Cheese Bricks
Ingredients
Vegetable and Goat Cheese Bricks :brick pastry sheets
- 1 zucchini peeled and grated
- 1/2 onion peeled and sliced
- 1 small leek sliced
- 1 tbsp olive oil
- 1 package of lardons
- 1 goat cheese log
Step-by-step directions
In a pan heat the olive oil, add the zucchini, onion and leek, cook for 15 minutes. Add the lardons and cook for 5 minutes.
Preheat the oven to 355°F (180°C).
Once the vegetables are cooked, lay out a brick pastry sheet, add the filling and a slice of goat cheese then fold (I folded it into a roll but you can make them into triangles) and cook for 15 minutes in the oven.

Good recipe, personally I don't peel the zucchini and I only cook the filling for 5 minutes to keep it a bit crispy, the lardons can also be replaced with diced smoked duck breast or poultry.
