A brownie that's both soft and crunchy at the same time! Less fatty than a classic brownie thanks to almond powder, but just as tender in the center. Pine nuts add crunch and a subtle hazelnut flavor that changes things up from chocolate alone. Precise baking: 23 minutes, not a minute more, or you'll lose that melting quality.

Ingredients
7 oz (200 g) dark chocolate (containing at least 70% cocoa)
4.25 oz (120 g) sugar
3 eggs
4.5 oz (130 g) softened butter
1.75 oz (50 g) flour
1.75 oz (50 g) almond powder
1 teaspoon cinnamon
4.25 oz (120 g) pine nuts
Step-by-step recipe
1 Preheat the oven to 355°F (180 °C) (gas mark 6).
2 Melt 7 oz (200 g) dark chocolate (containing 70% cocoa) in a double boiler.
3 Mix together 4.25 oz (120 g) sugar, 3 eggs, 4.5 oz (130 g) softened butter, 1.75 oz (50 g) flour, 1.75 oz (50 g) almond powder and 1 teaspoon cinnamon. Stir in 4.25 oz (120 g) pine nuts, then add the melted chocolate to this mixture.
4 Butter a square mold, pour in the batter and bake for exactly 23 minutes.

Great recipe!
A 70% cocoa content for chocolate is at the maximum threshold, otherwise you'll end up with bitterness, which children usually hate. Remember, too much is the enemy of good.
The chocolate should be just barely melted to preserve its intensity, and ideally you'd toast the pine nuts in a dry pan to bring out that hazelnut flavor.
