Ingredients for 6 servings
servings
Butter for the pan
0.4 oz (10 g) of brown sugar for the pan
1.9 cups (45 cl) of whole milk
1.7 fl oz (5 cl) of liquid crème fraîche
1 vanilla pod
1 whole egg + 3 egg yolks
2.6 oz (75 g) of caster sugar
1.1 oz (30 g) of melted butter
0.9 oz (25 g) of almond powder
0.9 oz (25 g) of flour
1 punnet of raspberries
Step-by-step directions
1 Preheat the oven to 200 degrees.
2 Prepare a tart pan by buttering it and spreading the brown sugar on the bottom.
3 In a saucepan, bring the milk and cream to a boil and infuse a vanilla pod in it.
4 In a bowl, break the whole egg and the yolks. Add the caster sugar and whisk until the mixture whitens and thickens.
5 Add, mixing between each ingredient, the melted butter, almond powder and flour.
6 Pour the milk-cream infusion over the mixture by filtering while whisking to avoid lumps.
7 Distribute the raspberries on the bottom of the tart dish and pour the mixture over them.
8 Bake for 40 to 50 minutes at 200 degrees. Check the cooking by inserting the tip of a knife into the clafoutis. It must come out dry if the clafoutis is cooked.

Of course not exactly a clafoutis because this word can only be pronounced in our kitchens when prepared with cherries. (Smiles).
