1 very ripe pineapple, peeled and with the center removed
6 crushed cardamom seeds
1 heaping teaspoon of red chili powder, more or less according to your taste
1/2 cinnamon stick
4 to 5 shallots finely chopped
5 to 6 tablespoons of powdered sugar
1 wine glass of coconut milk
1 heaping teaspoon of black curry
salt pepper
Step-by-step directions
1 cut the pineapple into very small triangles while keeping the juice produced by the cutting. 2/ sweat the shallots in olive oil in a pan. Add the chili powder according to taste, the cardamom seeds, the cinnamon, the black curry and a minute later add the pineapple and the recovered juice. 3/ simmer over low heat for 20 minutes. incorporate the sugar, if your pineapple is already very sweet, reduce the amount of sugar added and simmer for another 5 minutes to caramelize slightly. 4/ add the coconut milk, let it heat for a minute and serve.
Chef Patrick's Comment
A tropical recipe difficult to make in mainland areas, because we are not familiar with black curry and what can be said about the seasoning? I think you have to be "from there" but this is undoubtedly a recipe worth trying.
