  • Le Montansier for 12 to 16 people:
To prepare your "Dacquoise"That is 4 bases of 50 cm x 25cm
  • 32 egg whites
  • 5 g (0.2 oz) fine salt
  • A small pinch of vinegar
  • 750 g (26 oz) caster sugar
  • 1 kg (2.2 lb) of tant pour tant (500 g (17.75 oz) icing sugar, 500 g (17.75 oz) almond powder) all sifted together with 75 g (2.6 oz) cocoa powder (Van Hooten style)
Pistachio pastry cream:
  • 35 cl (1.5 cups) whole milk
  • 4 egg yolks
  • 40 g (1.4 oz) sifted flour
  • 80 g (2.8 oz) caster sugar
  • the interior scraped from a Bourbon vanilla pod
  • then
  • 200 g (7 oz) pure pistachio paste
  • 4 cl (1.4 fl oz) good Kirsch
  • 500 g (17.75 oz) raw butter (from a churn if you can).
