This semolina salad is enhanced with candied peppers, diced young hollyhock stems, diced blanched tomatoes and flavored with turmeric.
Ingredients for 4 servings
- 14 oz (400 g) fine semolina of good quality
- 3.5 oz (100 g) candied yellow and red peppers diced
- 1 beautiful young hollyhock stem scraped (like an asparagus) diced into small pieces and quickly sautéed in olive oil
- 2 garden tomatoes blanched and diced
- 1 clove garlic, degemmed and chopped
- 1.25 cups (30 cl) seawater or salted mineral water
- Olive oil
- 1 tablespoon turmeric
- 1 teaspoon harissa
- Fine sea salt
