Ingredients

for about twenty macarons:
  • 3 egg whites
  • 100 gr (3.5 oz) of caster sugar
  • 140 gr (5 oz) of almond powder
  • 1 finely chopped lemon zest.
Spices:
  • Crush three cloves with the bottom of a saucepan or a hammer. To this clove powder, add 20 gr (0.7 oz) of caster sugar and 10 gr (0.4 oz) of ground cinnamon. Mix everything and pass through a fine sieve.
