Recipe: Gingerbread Bread
Ingredients for 6 servings
- 8.75 oz (250 g) of milk
- 4.5 oz (130 g) of acacia honey (or wildflower)
- 2.8 oz (80 g) of butter
- 2.1 oz (60 g) of caster sugar
- 1.1 oz (30 g) of chopped almonds
- 8 oz (230 g) of flour (either 4 oz (115 g) of white and 4 oz (115 g) of rye mixed)
- 2 free-range eggs
- 0.7 oz (20 g) of baking powder
- the finely chopped zests of one untreated lemon and one orange
- 1 teaspoon of a mixture of cinnamon, star anise and nutmeg powder
Step-by-step directions
1 Put in a thick-bottomed saucepan the honey, sugar, butter and milk and melt it very slowly then let it cool and set aside.
2 In a mixing bowl or small mixer, pour your flours mixed with your baking powder, the spoon of spices, the zests of lemon and orange and the chopped almonds.
Knead well then gradually add the honey-based mixture and the eggs until fully incorporated.
3 Preheat your oven to 320°F (160°C) (5-6)
4 Pour your batter into a long mold.
5 Bake for 30 to 40 minutes (test with your dry hot needle). If you see it browning, cover it with aluminum foil.
This homemade gingerbread bread will be perfect for a snack, or to accompany a foie gras terrine for example.
