- 230 g (8 oz) of flour (either 115 g (4 oz) of white and 115 g (4 oz) of rye mixed)
- 2 free-range eggs
- 20 g (0.7 oz) of baking powder
- the finely chopped zests of one untreated lemon and one orange
- 1 teaspoon of a mixture of cinnamon, star anise and nutmeg powder
