Ingredients for 8 servings
- 3 whole free-range eggs
- 6.25 oz (180 g) caster sugar
- 8 oz (230 g) sifted wheat flour, type 45
- 4.5 oz (130 g) butter (baratte or Echiré if possible), melted
- A few sprigs of lavender flowers (2 or 3), infused for just 5 minutes in 1.7 fl oz (5 cl) of hot milk, then strained and cooled
- 1 sachet vanilla sugar
- 1 sachet baking powder
- 4.4 oz (125 g) citron jam (with chunks)
