Ingredients
- Madeleines with candied citron heart scented with lavender from garrigue
- 3 whole free-range eggs
- 180 g (6.25 oz) caster sugar
- 230 g (8 oz) sifted wheat flour type 45
- 130 g (4.5 oz) butter (churned or from Echiré if possible) melted
- a few sprigs (2-3) of lavender just infused for 5 minutes in 5 cl (1.7 fl oz) of hot milk then strained and cooled
- 1 packet of vanilla sugar
- 1 packet of baking powder
- 1 small jar 125 g (4.4 oz) of candied citron jam (with pieces)
