Lightly Caramelized Sweet Potatoes light and colorful
Ingredients for 4 servings
- 17.75 oz (500 g) of sweet potatoes
- 1 sliced onion
- 1 leek cut into thin slices
- salt and freshly ground pepper
- 1 teaspoon paprika
- 1 teaspoon cinnamon
- a pinch of nutmeg
- 1 tablespoon honey
- 3 tablespoons olive oil
- a bunch of flat parsley, finely chopped
- some sliced almonds, lightly toasted for decoration
Step-by-step recipe
Clean the sweet potatoes and cut them into medium-sized cubes.
Heat the oil in a sauté pan and brown the onions and leeks until they become translucent. Add the sweet potatoes and spices. Cook, stirring often. The sweet potatoes should cook but remain firm (test with a knife).
Add the honey 5 minutes before removing the pan from the heat, continuing to stir to caramelize the sweet potatoes.
Serve hot decorated with chopped parsley and toasted sliced almonds.
