  • 200 g (7 oz) small brown button mushrooms, cleaned and quartered
  • 2 shallots, peeled and finely sliced
  • 150 g (5.25 oz) green asparagus tips, just cooked al dente
  • 50 cl (2.1 cups) liquid cream (30%)
  • 60 g (2.1 oz) + 40 g (1.4 oz) Roquefort, crumbled
  • 10 cl (0.4 cup) Sauternes or sweet white wine
  • 40 g (1.4 oz) walnut halves, lightly crushed
