  • 1 beautiful grain-fed chicken, cleaned, 4 lb (1.8 kg) to 4.4 lb (2 kg), cut into 8 pieces
  • 7 oz (200 g) small brown button mushrooms, cleaned and quartered
  • 2 shallots, peeled and finely sliced
  • 5.25 oz (150 g) green asparagus tips, just cooked al dente
  • 2.1 cups (50 cl) liquid cream (30%)
  • 2.1 oz (60 g) + 1.4 oz (40 g) Roquefort, crumbled
  • 0.4 cup (10 cl) Sauternes or sweet white wine
  • 1.4 oz (40 g) walnut halves, lightly crushed
