Celeriac purée is perfect served with game stews (civet) or roasted duck breast, for example.
The common mistake? Boiling too vigorously or too long: celeriac turns watery and bland. 25 minutes of gentle simmering is the timing that matters. Use a vegetable mill to keep texture light and airy, never a blender which crushes everything.

17.75 oz (500 g) celeriac, peeled and tossed with lemon juice
21 oz (600 g) potatoes, peeled (starchy variety)
0.8 cup (20 cl) whole milk
salt
pepper
grated nutmeg
2 tablespoons olive oil
Step-by-step recipe
1 Cut the celeriac and potatoes into large chunks, then cover with water. Season with coarse salt and simmer gently for 25 minutes without a rolling boil.
2 Meanwhile, heat your milk and add fine salt, a grind of pepper, and grated nutmeg.
3 Drain your vegetables, pass them quickly through the medium grater of a food mill, then place over heat and stir in the seasoned milk, finishing with the olive oil at the very end. Here's the thing, and it's strange but true, you're going to start really loving the taste of celeriac...
A chef's advice
In French-speaking Switzerland, celeriac is traditionally sliced very thin on a mandoline before cooking, so pieces absorb the hot milk better. Some Belgian Ardennes cooks add a pinch of freshly grated nutmeg at the very end (not the start), creating a small surprise. Pair with Sancerre or dry Alsatian Riesling: mineral acidity wakes up the creaminess, milk's richness finds balance. The key trick here is the vegetable mill. Pass through while hot, don't delay. If you wait for it to cool, you lose airiness. Bistro cooks' move: add olive oil at the very end, on the heat, never before. It creates a natural emulsion that makes everything velvety without heaviness.
