I decided to suggest this one because the theme is summer salad and nothing is more refreshing than a tuna rice salad. You'll find all the beautiful colors of the sun in it. Lighter than classic Niçoise salad, this Camargue rice version stays fresh longer and preps ahead beautifully. The turmeric adds a subtle peppery note that makes all the difference. Perfect for picnics and buffet spreads.

Ingredients for 6 servings

14 oz (400 g) of Camargue rice
7 oz (200 g) of fresh peas (or frozen)
10.5 oz (300 g) of organic corn kernels
5.75 oz (160 g) of pitted green olives, sliced
9 oz (260 g) of whole natural organic tuna, roughly crushed
3 ripe tomatoes, blanched
6 fresh eggs
0.3 cup (8 cl) of soy sauce
0.4 cup (10 cl) of good olive oil
2 juices of untreated lemons
1 teaspoon of turmeric
Salt and pepper
Step-by-step directions
1 Bring 1.1 qt (1 liter) of salted water to a boil, then add the rice and cook for 20 minutes over medium heat
2 Bring 1.1 qt (1 liter) of salted water to a boil then plunge the peas for 3 minutes then drain them and refresh them with ice water and drain them.
3 In the same pot, following the same method, cook the eggs in salted water for 9 minutes and refresh them
4 While the rice and eggs are cooking, pour into a salad bowl: the soy sauce, olive oil, lemon juices and one teaspoon of turmeric, salt and pepper.
5 When the rice and peas are cold and well drained, add the tuna, corn kernels, tomatoes cut into dice to your prepared sauce, stirring with a wooden spatula, taste the seasoning, cover with plastic wrap and refrigerate for at least 2 hours The eggs will then be used to decorate your salad by placing them on the rice salad with, if you wish, a few anchovies and nasturtium leaves.
A chef's advice
The classic mistake: tossing warm rice into the dressing. The rice will soak up all the liquid and turn mushy. Wait until it cools completely, at least 30 minutes at room temperature or straight into the fridge. That's the move that matters.
