A healthy yet flavorful way to enjoy a fairly fatty fish. In the microwave, it takes just 3 minutes. You keep all the salmon's moisture with zero drying out. The parchment creates its own steam, so the lemon juice and mustard cook at the same time as the fish. Perfect for busy weeknights when you're short on time.

Ingredients for 4 servings

4 fresh salmon fillets, boneless
1 lemon
4 tomatoes
4 tablespoons mustard
Salt and pepper
Fresh thyme and chopped parsley
Step-by-step recipe
1 Prepare 4 squares of parchment paper, one per fillet.
2 Place a salmon fillet on a parchment square, add a squeeze of lemon juice, then top with a tomato sliced into rounds. Add a tablespoon of mustard and spread it over the tomato. Add the thyme and parsley, then season with salt and pepper. Fold the papillote closed.
3 Repeat for the remaining 3 papillotes. Microwave for 3 minutes, or a bit longer if the fillets are thick. Serve right after opening, be careful it's very hot. Enjoy!
Frequently asked questions
Can you swap mustard for something else?
Yes, a spoon of crème fraîche with a touch of honey works great. Or pesto if you like herbs. The point is having something tangy or creamy that sticks to the tomato. Skip mayo, it doesn't cook well in the microwave.
Why does the papillote smoke when I open it? Is that normal?
Completely normal. That's just steam escaping. Wait 30 seconds after removing from the microwave before opening, or you'll burn your fingers. Peel back the paper slowly, steam rushes out fast. Your salmon is perfectly cooked, that's a good sign.
Can you prep the papillotes ahead of time?
Yes, up to 8 hours in the fridge with paper closed. Beyond that, the lemon starts curing the raw salmon. Ideal in the morning for dinner. Don't freeze them already assembled, moisture freezes poorly. Your raw fillets and ingredients frozen separately keep 2 months though.
