How to do it on iPhone :

8 cloves of garlic, 10 minutes cooking, done. A velvety soup where garlic turns sweet and mellow, thickened with egg yolks the traditional way. Crispy croutons fried in olive oil do the rest.

Ingredients for 4 servings
servings
0.3 cup (8 cl) olive oil
8 garlic cloves (degermed and crushed)
1 bay leaf
a pinch of thyme flowers
1 pinch of saffron powder (a tiny bit)
2 egg yolks
16 small slices of baguette bread fried in a pan with olive oil
salt, freshly ground pepper
Step-by-step directions
Recipe progression
1 Heat the olive oil then add the garlic cloves and let them sweat covered for 2 minutes then moisten with 1.1 qt (1 liter) of hot water. add the bay leaf, thyme, saffron powder, salt and freshly ground pepper and let cook covered for 10 minutes
2 Then blend the soup well, remembering to remove the bay leaf (at this stage some pass this soup through a chinois, not me). in the soup bowl put the 2 egg yolks then using a small ladle and a whisk, pour the soup little by little over the yolks while never stopping stirring until the end.
3 Do not bring this soup to a boil again, serve it immediately with the small croutons fried in the center of the table and watch the tender looks of your guests...
A chef's advice
Key point: pour the soup onto the egg yolks gradually, whisking constantly, or the eggs will scramble and you've got lumpy soup. That's the main pitfall here. In Provence, some add a splash of pastis at the end, others a pinch of nutmeg. I prefer it straight, garlic is enough. Serve immediately with croutons in the center of the table. That's when your guests really enjoy it.
